Marco Arrigoni makes one of the finest Gorgonzolas Dolce’s available: rich, winey and luscious, with just a subtle hint of blue. Tunworth Camembert.  Pasteurised cows’ milk.  250g. An English Camembert good enough to make a Frenchman weep: vegetal, porcini-flavoured and intense.  The Courtyard Dairy select only particular Tunworths that are more wrinkled, for a more intense flavour. Kirkham’s Lancashire.  Unpasteurised cows’ milk.  500g. Third-generation Lancashire-maker Graham (Mrs Kirkham’s son!) still follows the traditional two-day curd method, giving a buttery, yoghurty flavour with a fluffy and light texture that melts in the mouth.  The Courtyard Dairy is one of only two shops which still have Kirkham’s Lancashire made for them in a traditional 25kg (56lb) wheel.  This size ages slower, producing a better, longer-lasting flavour. Yorkshire Water Crackers.  150g. A neutral water cracker that is deliciously crisp and toasty.  Made in Yorkshire; a perfect accompaniment to any cheese. Yorkshire Fennel Salami.  Approx. 160g. Made using meat from a rare-breed of Berkshire pigs, with added hot fennel: the key ingredients for a Italian-style of salami, dry-cured in a traditional method for two months.  The end result is a Yorkshire salami that is balanced, with a rich meaty flavour and herby note. English Quince Jelly.  227g. Made only from English quinces, this jelly is perfumed, light and aromatic.  A must-have for the cheeseboard. Isle of Arran Oatcakes.  180g. Isle of Arran Oaties are the perfect oatcakes to go with cheese, with a crisp crunch and rich, nutty, caramelised flavour.  Oatcakes made in the traditional way and baked by hand by Wooley’s in Scotland. Red Onion Chutney.  210g. Great chutney made with red onions and apples, a touch of chilli and a bit of sweetness.  Perfect for all cheeses, especially soft cheese. Ciello Rosso – Nero d’ Avola (75cl, 13.5% abv). Made by one of Italy’s foremost biodynamic winemakers.  This classic Italian red is a medium bodied red-wine, with spicy and fruity red aromas.
