It\'s a cut above yellowfin tuna - the flesh is finer and much lighter in colour (hence white/ blanco) with its own distinct taste. The albacore is fished in many oceans. Our current stock is from British Columbia and the quality is absolutely superb. These loins are 30-35cms long; allow 100g to 200g per serving.
